Refried Beans
Dave told me I should post some recipes on my new blog. He had a good idea. I love cooking. I am an Alton Brown Super Fan. If you are unfamilar with who AB is then you really must watch Good Eats on the food network.
Basically Brown was a successful nerd working on making car comercials and such, then one day he realized that he really loved cooking and that he really prefered that to making comercials for big car companies. (BTW thiis my own version you can get more details and probably a more accurate version here.)
I will avoid posting AB’s recipes on this blog though I may recomend them sometimes. You can rarely go wrong with his directions. I helps to watch the show though, because he explains things in more scientific terms. And his shows are great!

Refried Beans

1 bag of beans (either pinto or black beans)

1/2 cup of shortening (butter or margerine also work well despite what any one else might tell you.)

4 cloves of minced garlic (I like it you can use less if you want.)

1 finely diced onion

canola or vegetable oil

salt
First follow the directions for cooking the beans as you would normally, except save 1 cup of the water when you drain the beans. (I save all of the juice and use it in soups.) Set the beans aside
In a large frying pan, put the onions in and add enough oil to lightly coat the onion. Add about a table spoon of salt. The salt will draw out the water from the onions and that will help with browning the onions. Set the stove to medium-low heat (a little more toward med, though). Cover and leave along for awhile. You can stir it some every couple minutes if you want, but the goal is basically to let the onions brown. Once the onions are mostly brown add the garlic. Let onion garlic mixture cook over just lower than medium low heat. Once the room smells beautifully garlicly. Leave on medium-low heat, but turn attention to the beans for a few minutes.
Now you want to get our your potato masher and really goop up your beans. Dump the beans into the pan with the oil, onions, and garlic. Now pour in a little of the reserved bean water. Cut the shortening into pieces and drop them in one at a time. Turn the heat up to medium, and start mixing with a wooden spoon. Add the water as it is absorbed and also to your desired thinkness (though remember that the cooled off beans will be thinker than the ones in the pan). Once you get it all mixed in cook it for another couple minutes, and then pour into a big bowl and serve.
